Camping quesadillas: v simple for lunch. Simply put grated or thinly sliced cheese between two tortilla wraps and dry fry in the frying pan. Serve cut into quarters.
You can add all sorts of other stuff, in a thin layer. Tomato salsa, for a ‘pizza sandwich ‘, sweet corn, tuna.....
What about rice or cous cous with poached fish, or tinned fish, or diced chicken in a sauce? Appreciate might need to do shopping on the day you are eating the meal. I often use the quick cook flavoured rice like the Uncle Bens Tomato or Mushroom rice. It will cook in a pan with a little water in a few minutes.
If you are using bbq or an oven, try chocolate bananas.
Slit a banana down the seam but don’t cut in half. Put some squares of chocolate in to the banana. Wrap in tin foil. Keep tinfoil opening to the top and roll or fold down. Place on bbq or in oven. Lovely on a cold or wet night. Eat straight from the banana.
Camping (tinned) potatoes - fried, then all other stuff for a cooked breakfast. I like it served as dinner I thinkit tastes odd served at breakfast time - I prefer cereal/croissant then. (Yes I know this is odd).
Chicken breast, jar of sauce (curry or tomato variety), veggies and served with 'camping rice'- the pouches. The microwave/pouch rice can be reheated in a pan. I think its 30 mls (some varieties tell you how to hob cook and others don't - so check the amount in the supermarket then buy the variety you'd like - just remember the amount of water). So pop the rice in a pan to heat, add 3 x desert spoons (30mls) of boiling water and heat until all water absorbed. If really hungry or fancy a change can serve with naan or popadoms too (not done this yet as we have not reached the 'teenage years' yet!)
Burgers, sausages or kebabs - you know the drill. Served with or in a bun with some salad veg nearby. Could buy kebabs off the deli counter or make own with the bottles of sauce and some kebab sticks (good for making smores too!!) Could use tinned hot dog sausages which will only need heating in hot water.
I usually take chilli / bolognaise / chicken casserole (only 2) for the first couple of nights. Served with pasta (not for your daughter) or camping rice or camping potatoes, possibly even couscous or gnocchi. We use a passive cool box (that means we use ice blocks to keep our food stuff cold).
I have a super fussy daughter too, I feel your pain! My other two kids eat anything! I tried everything with her but the only camp food she would eat was bacon butties. I originally had a double burner stove and a bbq. My daughter hates pasta, bbq food and any form of stew! I ended up buying a cadac carri chef 2 and it's been a fantastic investment for all 5 of us. I have the paella pan which is basically a giant frying pan, the bbq griddle and the pizza stone and we love it. My fussy daughter now enjoys pizzas, stir fry, and naan bread when we camp. I can also use it as an oven, if I'm desperate enough I can cook her favourite chicken nuggets lol. The cadac was expensive but we use it at home now aswell. My husband insists on all pizzas and naan bread be cooked on the cadac now! I hope you find something that works for you, hungry kids are grumpy kids in my house at least!
I have a massively restricted eater for a son, but he lives on pasta. However he did love dampers (bread twists cooked on sticks over the fire) and wolfed lots of those down. Pitta breads ‘toasted’ in a dry pan and filled with whatever she likes might be good for quick snacks?
I gave up cooking whilst camping..
Big bowl of cereal in morning, Banana and snack whilst out for the day...
Then a nice evening meal or take-away at night..
I only bring a little stove to heat water for hot chocs and coffee..

Having the worlds fussiest daughter regarding food it been 18 years of mayhem. She has never camped but i can say that the idea someone mentioned about two rings at home is a cracking idea. Try out some foods before you go at home. It is quite surprising what you can rustle up on site if you look around.
IDEAS.
You don't need to take everything with you. Plan the meals and pop to the shop each day.
old el paso fajitas kit. One pan. And frying pan to warm fajitas.
Hunger Buster tins with toast.
Asda specially for you burgers are amazing and cook easily.
Camp fire stews... These are anything you like popped in the pan with a knorr stock pot. You can use tinned pots and carrots etc.
Try some of the tinned stews like the Irish one.
Good old hotdogs.
Poached egg/fried egg/scambled and beans on toast.
Chilli and rice. veggie option too.
Corned beef hash and crusty bread.
Sizzling steak baguettes.
The list is endless.
Another thing to bare in mind is where you fancy going. Check out the local pubs etc on google/tripadvisor reviews. Some offer 2for1 etc. A couple of years ago we found a 2for1 in devon and it was amazing even tho we were in a caravan. We did the cereal for breakfast and made sandwich's for lunch on the move followed by the pub at tea time. Yes it may for costed a little more for teas but was quicker easier and less washing up. Most Wetherspoons do cracking meals and the coffee top ups are free.

well we survived. thanks everyone for the tips. managed to get the little ones fed well. I did as many suggested and kept it fun and simple.
the camping quesadillas went down very well. We were much luckier then expected with the weather so a bbq was busted out.
my new patended cowboy dinner was the star meal though, if you ignore the one pizza hut we had.
next time I'll need to upgrade my cooking kit I think.
