We have four kids aged from two to seven, we only started camping last year with just a couple of weeks in Devon and Cornwall so we aren't by any standards experts. We managed to pick a really wet week for our first trip but as ours are a little older than yours refused to give in to the weather and still had a nice trip albeit we were away the week of the Birmingham Hurricane and cut it short by a couple of days as we were worried about the tent taking off.  I think as they get older you relax a little about bedtimes and going out in the rain.  We still used the adventure playground in the pooring rain and I reckon had more fun than if it was dry.  As for sleeping, find a site with an indoor swiming pool or adventure playground close by and wear them out durring the afternoon.  One of our kids has a type of Autism which involves really bad sleep problems and the only time she sleeps is on holiday.  Keep with it, in time you will find your own coping stratergys, and you could end up going abroad and have it rain non stop.  Some friends of mine did that at Christmas and payed a fortune to be stuck inside a hotel room.
