If we've gone away for a week and have the camping fridge, double burners, BBQ then pretty much eat what we would at home but rely on more one pot meals. Couple of days with just my kids then I improvise more, use more tins and even pre-prepare vegetables so can cook quickly once tent is up. I only take the one ring picnic burner then and bucket BBQ.

Couple of my quickies

Pesto Pasta
Sliced lots of peppers and red onions and put in bag before leaving with clove of galric and tbsp balsamic vinegar.
On site cooked them slowly in pan and put to one side, they're nice enough cold so don't worry about keeping it warm.
Boil pasta, drain, jar of pesto, stir in small jar of sweetcorn and the veggies.
If you need to bulk meal up then good fresh bread and pre-prepared salad from supermarket.

Sort of vegetarian Kedgeree
Boil eggs, empty water, fill with cold and leave to one side. I leave them on the soft side.
One of those pouches of rice in some sort of Indian flavour. I go for  Tilda one that has yellow split peas and cinamon (rather than spicy) one for my kids. Into frying with tin of drained lentils. Only takes a few minutes.
Peel eggs whilst cooking and slice into quaters.
Serve mixture onto plates then top with the egg pieces.
Again can bulk up with bread, naan bread, mango chutney, salad, sweetcorn.

Veg curry
1 chopped onion. 1 large potato, 1 aubergine, 1 pack mushrooms (chestnut is best halved but also whole button mushrooms. Chop potato and aubergine into smallish bite sixed chunks.
Fry 2 - 4 tbsps of fav curry paste for minute in large pan. Add onion, then potato and aubergine. Fry for couple of mins. Then add tin of coconut milk, lid on simmer until all cooked. May need to top up with bit of water if gets too gloopy. Salt, pepper to taste.
