Oh, I can do helpful armycampers!!!!
ClareL, your partner is acting like a child. Most men do, and will get away with it as long we let them. It all harks back to the moment his mother tore him from her breast. Deep down he earns to be nestled back against her teat, suckling the milk of maternal love. Now obviously he can no longer do this. Your partner does sound weird, but not psycho! But his childish behaviour around all camping is basically a tantrum. He doesn't really want to do what you want him to do so he acts like a child in protest, (he doesn't want to give up the breast so he throws his toys out of the pram.)
Understanding where this behaviour stems from enables you to deal with it in the most effective way.
If he insists on going down the childlike route then you need to look at what your role is. Currently he has manipulated you into the role of mother. Chastising him for bad behavour, shouting, getting angry, all the usual traps our kids usually put us in, or in other words, to feed the metaphor, you have said "No more booby milk!!"
So how do we stop this vicious cycle?
Well, What you need to do is reverse the roles. Only a woman can do this because you are in posession of the most powerful weapon in the arsenal. A weapon your partner is too afraid to use...tears.
ClareL, next time he refuses to do as you tell him at camping...and pick your time carefully, cry. The tears will put you into the role of baby, not just the toddler child that your partner is being, but the baby.
Doing this will effectively strip the breasts from you and place them, bare with me I'm going deep into metaphor here, most firmly on your partner's chest. You are a tiny helpless baby, crying, demanding milk, needing attention, more immediate attention than any child would ever need, and you partner is cast into the role of mother, placing you at his teat, to calm your tears away.
Bingo, roles are reversed, you are in charge getting your own way beacause your partner will now know that if he misbehaves too much you will strip him of his more comfortable role of child and I suspect he doesn't want that. So he will now do as you tell him, acting like the true camper he should be.
Although if that fails, seriously, shoot him. I would.
