Some great ideas, but I'm amazed at how few people have mentioned vegetables?

Pot noodles, takeaways, smash - it's all cr*p, full of additives and not one ounce of nutrition!

Not getting on my high horse, as I'm partial to the odd donner kebab with extra chilli sauce, but you can't get any easier than peeling a few carrots, breaking up some brocolli and sticking it in a pan. Or how about an omelette - ham, cheese, tomatoes, bit of fresh chilli and a couple of torn up basil leaves? Easy :)

Glad to see fajitas mentioned though, easy to cook and really healthy (if you leave off the sour cream and guacamole!!)

We take plenty of fruit with us which might make up for the lack of veg.

I am a bit of a stickler for healthy eating at home but not on holiday. Especially not when we are camping. We cant afford to eat out every night so we try and make it a bit special and have extra treats and nibbles that we wouldnt have at home. We do have fruit, veg and salad though.

Cant believe how many of us take a Spag Bol for the first night! Next time I set up on a Friday night I am going to have visions of everyone else on the campsite tucking into their Spag Bol. If its a weekend away we have full English on the Saturday, BBQ Saturday night and bacon or egg butties before we come home on the Sunday.

For a week away we try and make the cooking part of the fun. The kids are always keen to help and its easy for them to get involved as the cooking is usually fairly simple.

I am interested in the mini ovens, are they any good? Do they take ages to cook anything? I have cooked whole chickens in the slow cooker before which makes a really nice change when you are camping and feel like a proper meal.

Risotto is a personal favourite of mine while camping. Aborio rice, Onion, Garlic, Pancetta, Seasoning, Stock cube, Splash of wine, Fresh parmesan, seasoning...all cooked in one pan. Easy and super tasty.

Another easy on is pan fried veg (carrot, peppers, squash, green beans etc), put to one side and pan fry a nice sirloin with it.

I usually take a load of cheese, biscuits, dry cured meats to go with the gallons of wine I'm going to drink.
