Can't comment on that model from direct experience, but one thing I would say is that from pics on the web, it looks like the corners are all on adjustable webbing tapes. If so, one tip that makes pitching easier with other tents that use these is to make sure that you slacken these right off at the start, so the pole insertion is easier, then tension at the end to get everything square and level.
As for camping under canvas, the answer to your question is yes and yes. We've just returned to canvas after many years of polyester (thanks to the enthusiasm of several here), and are bowled over by the difference in comfort and quality levels. Sure, there's a downside in the extra weight, bulk, and drying out procedure, but, if the permanent grin on my wife's face this weekend was anything to go by, it was one of the best moves I have ever made. Let's hope you rediscover the "magic" too!
