Usually it's about the maximum number of persons per pitch, not about the tent itself. Manufacturers always exagerate the size of their tents anyway. A 6 persons tents wil only comfortably sleep about 4 people, a 7 berth tent probabaly only 5 at most. Unless you'd like to sleep shoulder to shoulder very tightly. Usually they count about 50 cms per person. This will not even suffice for a regular air matrass or selfinflatble matress.
As to being too cold: that depends very much on your equipment, especially the quality of your sleeping bags and sleeping mats. Plus the location. The higher the location, the colder the nights. Lower and closer to the seaside will be warmer. Of course having a nice (and safe) heater will greatly improve confort during the evening. Camp fires may be nice as well, but, alas, not possible inside, unless you'd have a tipi or katan with preferably a special stove inside.
I must admit that I enjoy our caravan very much these days. With my tent I would never have contemplated camping in the snow, which I will do now. I did experience nightly frost when still tenting, without any problem due to proper equipment.

We stayed at Sauchope Links at Crail two weekends ago and had a great time.
Can highly recommend it - there was a family there with a Vango Diablo 900 (absolutely huge !!) so I'm sure they would accept your tent.
