We've got our tent now and want to do a couple of one night weekend stays thought we'd found a great site at Woodhall Spa but it seems you cant stay for one night!
Is this the norm or do most campsites allow one night stays?

I don't minimum for BHols (which is usually 3 days mind which can be problematical - means you have to either travel up on the Friday or come back Tuesday to get 3 nights in and not all of us can take extra leave). If you want to get away for the weekend and you work, you can only leave on Saturday and return Sunday - unless you leave after work on Friday, face the traffic, arrive late and in the dark and annoy other campers while you put your tent up!
though a few of the campsites I rang said if we were willing to ring the night before they could let us know and as long as we didnt want electric we should be able to get on.

Some sites have this rule - I think its them maximisin their booking potential. Why let a 1 night camper take your pitches when someone may enquire for 2 night weekend camping after they have let you booked!!! Thats why some sites have said to you call the day before - If no one more lucrative has come along you'll do!!!
Annoying!!!
