Same as suns said, it depends on the site, the all singing all dancing site that are popular get booked up months in advance at holidays and bank holidays, many people choose the sites that have things for kids
We go to sites that are little known and have minimum facilities, outside the usual holiday periods and weekends we sometimes book the day before, if you need something quick it may be better to compromise and let your children make their own entertainment, cheap badminton set, swingball, football etc (but not round other peoples tents), it's amazing how kids will enjoy simple games, sadly too many have lost the knack to be inventive and explorative
Maybe a farm site where they can observe the animals?
