leg of lamb - brown the outside first then sit in a 'gravy' of half pot of oxo and mint sauce

have a go at making your own bread (we used wrights bread mix) 100 Ignore instructions totally, stir mix for 1 min pretend to knead it for about 3 mins, leave in dutch oven for the afternoon, then throw on bbq/bonfire that night - watch you don't burn it though!  tripod worked best for the bread as it held it above the flames

meatballs - brown the onions and meatballs by frying in the dry oven on the heat.  then throw all the usually bolognese ingredients you always use (lloyd grossman pasta sauces are yummy)

sausage casserole, chicken casserole, beef casserole

we tried everything!

Kleftiko

Brown a leg of lamb or lamb shank, throw in some oregano & a bottle of white wine,  leave it cooking all afternoon & eat with crusty bread & greek salad

Dutch oven sounds great. can you tell me how you use one (does it need to be over an open fire?) Thinking of getting one. Where did you get it from

i got it from ebay from a seller called mobile eyes £20 plus £7 p&p.

looks like i got a small bargain as some of them are hitting over £30.

how to use one?....no idea yet, just had a google around at some of the recipe sites and how to actually 'season' the dutch oven, along with care and maintenance.

You can get a dutch oven cookbook from e-bay!

It costs about £8!

I got one recently, they are brilliant!

To season it I got some olive oil and rubbed that round the inside and out with some kitchen roll, then popped it in the oven upside down for about 2-3 hours (don't forget the lid too), let it cool, you'll notice its sticky but then the next day I did the same process again and hey presto its not sticky anymore - I only did mine twice but they say to do it at least 3 times

I used mine over a campfire using a friends tripod like this:

We made bread too

I just bought one of the tripods from Lidl which comes with a firepit and will use it over that for non-campfire sites

I also use it in the oven at home, cooks things quicker

One thing you MUST NEVER do is put cold water in it when its hot as it will crack

Also don't leave it wet as it will rust

Once dry I then rub some more olive oil inside and out and put away in the cupboard

Enjoy your DO!

How is it that one careless match can start a forest fire, but it takes a whole box to start a campfire?
