We finally decided to go for the 600 after a couple of trips to Wolverhampton to see them both up (the first a waste of time as Yeomans lied about their closing time on the internet). The 800 was just so big I couldn't convince Wayne we needed that much room. Hi Ruth. Sounds like an incredibly sensible decision making process to me! You've looked at both tents, had concerns about the bigger one, and bought the one to meet your current needs Trying to buy a tent to meet what you think need now is hard enough without trying to work out what you might want in the future.
Back to your original question - a tent is too big when it takes more away from your trip than it adds ie the joy of all that space is outweighed by problems of storage, transport, drying, time/effort taken to put it up and take it down, trying to keep warm inside it in cold weather. So, whether a tent is too big will vary from person to person and also, potentially, from trip to trip!
