I like the idea of doing pasta in a pan but not on the heat - how long do you reckon it needs to be left for before it is cooked?
I, too, make extra spag bol/chilli which I freeze and then re-heat on the first night. Pasta pesto is a good one - add some broccoli towards the end of the pasta cooking and stir in ham and cherry tomatoes with the pesto at the end. Chicken fajitas as per the above poster, chicken caesar salad (buy the bags with all the bits from the supermarket then all you need to do is marinate the chicken in a bit of wine/lemon juice/herbs and cook), anything vaguely Moroccan spiced to go with couscous also goes well with BBQ-ed fish. We only tend to have one BBQ and eat out too so don't get too stuck for ideas!
Breakfasts - can warm up pain au chocolat or similar in a pan, bacon cobs, hoping to get a camping toaster for toast!
Lunch - picnic stuff e.g. crusty bread, cheese, ham, cherry toms and mixed leaves or soup.

bacon and tomato pasta;
fry onion, add mixed herbs, chopped bacon and mushrooms chuck in 2 tins chopped tomatoes and cooked pasta mmmm.
We cooked the first 2 nights food b4 you set off, freeze it and keep in cooler bag and then it will be defrosted when you want to eat is, we normally take a curry for one night and chilli or spag bol for the next night youve just got to do the pasta/rice or have it with naans or pittas!!
I also make 'easy quiche' which is great for lunch or dinner with salad or you can cut it into squares for picnics; for 5 of us; 8 eggs, assorted veg (onions peppers, mushrooms, green beans, peas, kidney beans etc) 1 large tub cottage cheese, chop veg (raw) and chuck in ovenproof dish, mix cottage cheese and eggs with salt and pepper. pour over veg, top wth slced tomatos, of meat if you want ham, cooked chicken ( my kids love pepperami)bake in oven until set yummy!!
