We're going away on Saturday for 10 nights. Last year we had a big plastic crate (with lid) and left most food in there - all the packets, tins...and fruit! It soon had some condensation and I'm wondering if it was because of the fruit.
It could have been the fruit. It would 'sweat' in the box if it got warm and then condense on the inside of the box. It could be that damp got into the box at some stage, had it been wet and rainy ? We tend to keep our food in a box like you but I have never had condensation. The lid is not an air tight fit, so maybe having a bit of air circulation stops any condensation forming. I do keep the fruit seperately too.
We also store our food in a plastic box with lid and so far have had no problems. I guess, as the last poster said, it is more than likely the fruit. I guess a couple of ventilation holes in the lid may help, or keep the fruit separate.
Some tins and things like the HP sauce live in the camper cupboards - but the rest lives in a colapsable cupboard from Aldi. Even before we got the camper we had colapsable cupboards - but the Aldi one is the easiest to put up,
Everything goes in the cooker table cupboard thingy! We also take foldable crates for crisps etc so little legs doesn't have to go rifling whenever he wants some.

2014:
August: Scarborough, High Yedmandale. Not tenting though, using one of their lovely holiday homes!
We put all the cold stuff, veg, temperature sensitive stuff etc in one cool box, packets and things animals could potentially get into in/ or smell in another cool box and tins etc in a cool bag. Early and late season these all sit in the storage pod in the tent and in the summer they all go behind/under the trailer to keep cool. We got 2 good Campingaz cool boxes for a bargain £10 new last year in the sales - so makes sense to use them. For a weekend - it almost all goes in one cool box with the cold stuff nested within a cool bag within the box.
we use a full height larder cupboard for our food, it is ventilated at the back, although the big lesson learnt on the last trip was to zip up the doors if your going out for the after coming home to find squirrels riffleing through an eating our bread and weetabix!!!!!!!!!!!!!

Have a 3 shelve cupboard for tins packets and stuff. A cool box and plenty of freezer blocks for perishables, but main advice where possible buy it as you need it, you will be surprised how much food people take with them, just to bring it back again, and then they complain about lack of car/roof box/trailer space they have.

Whilst camping with my brother in France, we saw someone pull a full size fridge/freezer out of their trailer which they then set up in their awning :-)

Dry stuff (tins, oats, coffee etc.) in a bag in the tent, hopefully empty for the journey home.
Fresh stuff in cooler bag/bucket of cold water, whatever, or if it can take ambient temperatures (bearing in mind the tent can get very hot during the day) then I would leave it in a bag in the tent, maybe a fabric bag so the fruit/veg can breathe and not sweat.

We saw a van with the front box removed and the fridge freezer strapped to the front of the caravan.

I could see my hubbys face if i suggested that one, he already moans/jokes that we take everything but the kitchen sink.
