I cook from scratch nearly all the time, and would buy meat in bulk, cut down to single portion size, marinade them, before packing each portion in vacuum bags, then freeze them. I would then take a selection as and when required for BBQs or stir-fries etc...
I make individual breakfast packs too, each with 1 sausage, 6 rashes of smoked streaky bacon, and 2 rounds of black pudding. This way, I don't have to eat everything up as soon as I open a pack etc...
I also cook stews in bulk, such as chilli, spag bog, curries, Chinese stewed pork belly or beef brisket etc.., then pack them into single portions in plastic tubs such as Lok & Lok, and freeze them. Again, I would take a selection as and when I need them, just need to cook some starch such as pasta, rice or cous cous, stir-fry some veg, and I am done.
