As well as most of the above mentioned dishes, another one I do is lamb shanks and veg.

Get the boil in the bag type lamb shanks with gravy, usually in frozen section, then in the water that the bags are boiling in add the potatoes and veg, a very easy one pan meal, and very yummy!

cooking for 8 on a 2 ring stove i would do it in 2 sitting's kids first then cook for adults so probably 2 different meals.
What ever your kids fancy pasta or stuff (you can tell i dont have kids)

For the adult meal at this time of year I would cook on one ring some Jersey royal new potatoes, drain them put some butter in the sauce pan and pop the lid on and put to one side, they will stay warm enough while you then cook fresh cut asparagus only needs flashing in boiling water.

On the other ring fry some lovely Welsh lamb chops. If your in Wales ask the butcher if he has salt marsh lamb!

Ingredients

  • 200 g Basmati rice
  • 300 g chicken fillets
  • 2 tsp vegetable or sesame oil
  • 0.5 tsp fish sauce
  • 4 spring onions
  • 1 red pepper
  • finely grated zest of 1 lime
  • 80 ml chicken stock
  • 150 g Philadelphia Light with Sweet Chilli

Instructions

Cook the rice as directed on the packet.
Meanwhile, heat the oil in a wok or heavy based frying pan. Add the chicken and fry for 3-4 minutes, until thoroughly cooked.
Add the fish sauce, spring onions, red pepper and lime zest and cook over a high heat for a further 1-2 minutes.
Pour in the chicken stock and add the Philly. Stir until the Philly has melted. Serve immediately accompanied by the boiled rice.
