we use single cartridge burners and a cadac.  With that combination you can cook pretty much anything.  But if you are struggling there are loads of simple 1 pot meals.  My favorite is fresh stew made from scratch or boston bean hotpot (got the recipe off here).

However, so much you can cook with a little invention.  We have had full curries and chinese meals.  and with a cadac you can even do pizza or a cooked dinner!

Steak chips and mushy peas is another fave, why slum it when you can eat like kings? :)

I tend to cook the same sort of thing we would have at home:

Chicken and vegetable fahitas
Stew and Dumplings/Casserole
"Roast" dinner
Full English brekkie
Meatballs in tomato and basil sauce
Jacket potatoes
Chilli con carne
Spaghetti bolognaise
Spanish omelette and salad
Pasta bake
Salmon
Kebabs (seafood, chicken, vegetable)
BBQ - burgers, sausages, chicken drumsticks etc...

and for pudding
BBQ scones
Baked bananas stuffed with Mars Bars or chocolate buttons
Flamed pineapple
Chocolate orange muffins

I have cooked all of these dishes using a 2 burner stove and a BBQ.
I find my 3 tier stainless steel steamer very useful as you can cook a whole meal in it using just one burner.
