Best advice I can give you is to just relax - do whatever it is you like to do. For instance, we sometimes like walking, and sometimes never move from the porch of the tent all day.
Take your time putting up the tent, and make sure you do it all properly - the speed will come after a couple of times (we can now put ours up in 20 minutes if needed, like when chucking it down). I wouldn't worry too much about damaging poles, they are designed to withstand some pretty violent weather and such.
Yes, if you should have the misfortune to damage a pole section, it can be replaced - you can get spares from most "proper" camping shops; take the old one to check the diameter, then you (or perhaps someone at the shop) may have to cut it to length before rethreading.
For a quick temporary repair "in the field" (sorry!) duct tape may be useful.
