Just a though - if you have an electric coolbox I plug mine in the day before and get it filled with the stuff I am taking - then you don't have to worry about what you put in when you go early in the morning.
Where in Cornwall are you going? We are heading down to the Carlyon Bay campsite just outside St Austell on Sunday!
We decided to go on Sunday as most places (cottages, campsites etc) seem to be Saturday to Saturday at this time of year and wanted to avoid everyone in transit! Hopefully it also means that when we come back the following (bank holiday!!) Sunday most people will already be where they are going.
This will also be our first "proper" camp, we had a weekend a few weeks ago and although I used to camp as a child up to my late twenties, my wife and five year old are new to it.
I live by lists too. Have a fantastic trip and don't forget to post pictures when you get back.

I have spent half of last weekend making lists for August Bank Holiday! My daughter and her Fiance are taking the tent to Tenby and DH and I are taking the Trailer tent to Borth so we need two of (almost) everything. To make matters worse, a lot of the things we need are in the caravan, which is on a seasonal pitch in Oxfordshire. So - had a list of what each of us needed, a list of what had to be brought back from the caravan, a list of what is at home and another for what is being stored in my late Mom's garage until we sell her bungalow.
OH laughs at my lists,. but as I am the one who does the packing I will stick to them. A couple of years ago, somebody I knew was going to try camping for the first time and was talking about what to take so I was able to print them off my lists, to give them an idea - they found it really helpful, and the following year asked would it be possible to have another copy as they had mislaid- not a problem. I recommened keeping it on their computer, I have what I call my Camping Master which I pull off, save as: whatever, and then adjust to suit the trip - length, who is going, and if we are going in the camper or a tent.
