I made a very easy to do turkey casserole yesterday.
6 turkey steaks cut up into small pieces
4 rashers smoked turkey cut into small pieces
6 large tomatoes cut into quarters
1 onion sliced
2 carrots chopped up
3 cloves of garlic crushed.
1 tablespoon tomatoe pesto.
All into slow cooker and set on low for 8 hours.
the tomotoes disintegrate and it becomes very soup like in 1 st few hours but then will start to thicken and reduce and flavour becomes stronger and the turkey so tender it melts in the mouth.
Lovely and easy to do in the morning for a tasty evening dinner.
The hardest bit was I kept getting hungry by the smells as it cooked!
