sausage and bean casserole - served with bread for ease! All you need is cooked sausages (cook and freeze before you go), fry onion and garlic (could even do this before you go too!), add sausages, tinned beans (any sort including some baked) and tinned tomatoes. Heat through and hey presto! You can even add sweetcorn or mushrooms or anything else that comes in a handy tin!

I know this is an old post, but this might help in time for this year ....
I cook each year for a group of 40, with very limited cooler space, but have found that for such a large number it is easy to keep frozen stuff frozen for several days, purely because of the bulk.
I have a large normal cooler box (but have used cardboard boxes in the past too). And loaded up with frozen cartons of orange juice and/or milk along the base and then put in frozen mince, and - my best buy - a large bag of frozen pre-cooked chicken pieces, a layer of frozen sausages, etc. and then another layer of frozen juice/milk on top of that. Load the meat in the reverse order that you are going to use it so that you do not need to disturb it all getting the food out.
I always still have to allow time to take the chicken out to defrost on day 3! The pre-cooked chicken pieces are fantastic because I just lob them into some tinned Jalfrezi sauce with a load of extra vegetables for a very easy curry. Naan bread as well, of course!
The hot dog idea is great. How about offering chilli dogs too. Big pan of tinned chilli on the side with some grated cheese to load onto hotdogs. Makes a substantial meal!
Cheese doesn't have to be refrigerated and if you're worried about having it out of the fridge all weekend, just freeze and bring frozen to defrost over the weekend :)
