Lamb (or any other meat you fancy) casserole done on the hob. Just chuck in whatever meat/veg you like with water, stock etc..., include a bag of baby new potatoes & simmer until cooked. Lovely, easy, one pot meal.
Or, easy-cook rice, large tin of mixed veg, knorr veg stock gel thingy, all boiled together to make a nice savoury rice served with sliced sausages (sounds a bit rum but actually really tasty & filling)
Friday night Cobb roast beef sarnies (lit Cobb chucked meat on whilst pitching)
Sat night, steak, chips and onion rings
sun night baked Camembert and garlic bread, followed by a cheese burger.
Breakfast is generally bacon butties. Usually out for lunch.
Generally pitching night is hot sarnies from a lump of meat chucked on the Cobb when we get there

Last weekend we had cooked breakfast every day. Friday was Chilli ( already prepared ) & rice. Saturday chicken stew ( cooked in Remoska) Sunday steak, salad & new potatoes. Bought a throwaway bar b q for steak.
I am buying a Quest 500w grill today tho to give us a bigger grill & another hot plate if need be
I pre make a chilli and take with us for first night and make campfire nachos to go with it which is basically nachos grated cheese and salsa layered in a frying pan lined with double layer of foil then fold the foil over the top of the pan or put a lid on and heat on gentle heat for 10 mins, it's really yummy

Done enough cooking over the past half century, and it's my holiday, so anything that doesn't require cooking/baking/peeling/coring/stuffing/snipping/frying/washing or even can-opening will do for me, or eat out

We take uht milk and some of those mini packs of cereal for breakfast, and have bacon butties/cooked brekkie too. Sandwich stuff or pot noodle type things for lunches, tins of soup are good too, crisps and cookies. Normally pitching night is a campsite roast. We fetch a cooked chicken on the way, take instant mash, tinned veg and gravy granules-we're usually quite glad of it by the time its done! We also do bbq one night,
Brekkies we have instant porridge, fruit loaf toasted, bacon sarine etc.
Evening meal we either BBQ or have tin stew (tin of steak in gravy, tin of peas, tin of carrots and tin of new potatoes - all cooked together in one pan), or if we see a nice deli during the day, we often just have bread, cheese, olives and a bag of good crisps.

Sorry to go off topic a bit here. If you're taking two cars because you don't have enough room for people disregard this but if it's for space for stuff then.. Have you considered getting a towbar and trailer? The cost of fuel for two cars could quickly mount higher than the cost of a towbar and trailer. The trick is, that if you find a place that fits and supplies towbars.. They will rip you off so so badly. Find a towbar for your car on Ebay (A brand new one preferably, used onces can have bent bolts etc etc) and then find a local garage (or even a mechanic friend) to fit it. Then look for a second hand camping trailer. We got our towbar for £70 and have seen a lot of trailers for £50-80.. SO not as expensive as people might think.
We have to take 2 cars as we have 2 big dogs so they go in the boot of the estate and then equipment and children in the other car.
Although if we got a trailer we could just take the 1 car as we'd tow it on the estate car

Keeping off topic - trailer tow bar combo is the way forward. We can take 2 dogs (labs) all the gear plus 2 adults and 2 children. Our Biscaya is only marginally smaller packed than pitched so uses an enormous amount of space.
On topic - all of the above. If weekend camping then always the curry/Bolognaise frozen option for first night. We have gone from notebook BBQ to Weber Go Anywhere and now use a Cobb. So, usually always a BBQ of some type next night. Full fry up for breakfast.
We've made all sorts - Jambalaya, Ratatouille, full roast on the Cobb. If longer than just a weekend then we always take dried pasta and boil in the bag rice. You can always knock up a meal quickly with those staples.
Cooking al fresco is part of the camping experience for us so we tend to devote a lot of time to it!
As others have said make a chilli before you go, then reheat. I've also done various dishes in the slow cooker beforehand and frozen them, again just remove from freezer before you leave. Waitrose sell sauté potatoes in a non fridge pack - these are fairly good firied off. I've warm thin crust pizza through by pre cutting it and wrapping it in foil, the same with garlic bread. I've cooked paella and fajitas on the cadac, plus the usual BBQ assortment. I've also bought some of those tapas dishes from the supermarket and made double layer foil parcels and warmed them through. There really isn't much you can't do as long as you are prepared to adapt it slightly.
We've just bought a cobb and this weekend had apple crumble and custard - yumm
Also we always take a pancake mix (which just needs water and eggs) so we can have pancakes for breakfast
