We use a hanging rail from Argos (£8.99) which takes up no space at all in the car and is really easy to put together. On one end of the rail I put one of those hanging organisers (about £6-8 from somewhere like Robert Dyas. Don't put the castors on so it stands flat on the ground.
We have a pop-up laundry basket which looks neater than a bin bag for the dirty stuff.
We use those large laundry bags to pack our clothes in which squash down in the car.
And yes, vac-pacs are great and make sure you put them underneath something heavy in the car because some do have a tendency to start to reinflate.
