For now, disposable bbqs. Long term, invest in a Cadac Carri Chef (not safari chef, not big enough for a family), gas bbq, can cook pretty much everything on one.

Hi I have two thoughts on this go to the pub and don't bother cooking, or what we do is batch cook before we go, and freeze spaghetti bol stews currys, what ever you fancy and just warm it up, it's so easy just plan ahead.

BB.

We do a lot of BBQ meals, and have a good portable BBQ.

For other meals: one pot dishes that do not require long cooking (use of gas )
Pasta, with jar sauce
Things you can cook in a frying pan: hot dogs, fillings for fajitas, maybe a stir fry
Tinned curry (M&S) with rice: the sachets of rice can be heated quickly in a pan with a bit of water.
A good lunch dish: lay a tortilla in a big frying pan, cover in grated cheese or sliced cheese, add ham, or tuna, Dorito salsa, or whatever, top with another tortilla. Dry fry in pan, carefully flip over and cook some more, cut into 4.

ok with a two burner stove you can cook almost any thing you cook at home. just because it is camping does not mean meals have to suffer. it just needs to be well thought out and planned.
I am a chef so i do have a small advantage in the timing game but what about doing a bolognaise meat sauce; Fry meat off until browned, add finely chopped onion, garlic and any other veg you want to put in. add a tin of chopped tomatoes herbs and season to taste when almost done, on the other burner boil up some salted water to cook your pasta. Job done!
just practice at home before you go with what you equipment you have available and then try different foods and recipes. the more you get used to cooking on limited equipment at home, when your in the field it will be a doddle. :)

We have a frozen meal ready for our first night. It has to be chilli with nachos. Daughter insists. Helps keep the cool box cool on the journey as well.

We do lots of very basic stuff (we are also vegetarian) - so pasta and sauces (usually just use one burner, but two pans for this), curry and rice etc. And if we have electric hook up we take the slow cooker which helps - so you can do curry in the slow cooker, rice on the hob.

Oh, and to save space, I premix spices and herbs before I go. So I'll have a little pot that has a basic curry mix in, one that has an Italian type herb mix, one that has some kind of spicy BBQ concoction. So I don't need to take twenty spice pots, but I still have a similar mix to what I might do at home.

Pancakes for breakfast. Make the batter in an empty plastic milk bottle (or I think you can buy pancake shake mixes), but the kids love making the batter in the jug rather than with the blender we use at home.

I do really, really, really miss my oven though. I had t really realised how much I use it until we went away. I bake at least 4-5 times a week, and I haven't really worked out a good alternative for that whilst camping.

Your camping diet depends on access to shops, ability to keep fresh food cool and the power of your stove rings.
You just have to experiment. Have pasta, rice and tinned food available for those days when you just can't get fresh food.
