The Campus Brekenridge is a fabulous tent - very spacious and will withstand the worst weather! We had the Deluxe version but recently sold it to buy an Outwell Montana 12, the main reason being they are so darned time-consuming to erect and it was taking the joy out of going away on a whim with me dreading the arguments hubby and I would have putting the darned thing up and trying to occupy our 3 kids whilst we did it!
We put the Montana 12 up in 30 mins on our first attempt, as opposed to 2 & half hours with the Brekenridge Deluxe (we did get this down to 50 mins, but with guys all pegged etc it was a good 90 mins). Plus, the Brekenridge's erect inner first - so if it's raining, you have to be super quick to avoid getting it soaked. With the Montana it erects all-in-one, so no matter if it's raining.
Any of the tents which have the cross-over poles in the middle are going to be fiddly to put up - compared to tunnel tents like the Montana 12.
Incidentally, the Montana 12 would be a good size for you, especially as you can take down a couple of the bedroom pods if you like and have an extra large living area instead.
Plenty of tunnel tents to choose from - I would certainly only ever consider these in future.
