This is pretty much what I follow for my risotto:
2 tbsp olive oil
1 onion, chopped
2 garlic cloves, finely chopped
225g/8oz mushrooms, sliced
1 red pepper, chopped
3 chicken breasts diced
350g/12oz risotto rice
150ml/¼ pint dry white wine
1.2 litres/2 pints hot vegetable stock
Pinch of saffron
Couple of pinches of mixed herbs
2 tbsp chopped fresh parsley
salt and freshly ground black pepper
Method
1. Heat the oil in a saucepan and add the onion and garlic. Fry over a gentle heat for 2-3 minutes, until softened. Add the chicken and fry until the chicken is golden brown.
2. Stir in the mushrooms, peppers, rice and coat in the oil. Pour in the wine and simmer, stirring, until the liquid has been absorbed. Add the Saffron. Add a enough of the stock to cover the contents of the frying pan and simmer, stirring again, until the liquid has been absorbed and the rice is plump and tender. Add more stock if needed
3. Season with the mixed herbs, salt and pepper before serving.

What type of food do we cook???
As little as possible!!!
This time, turned the kettle on for coffee!
Turned the grill on for toast! Did make cheese on toast too!!
Took fresh fruit and a few tins, came back with the tins
Ate out the rest of the time!
I'm on holiday

The packs of Gallo Risotto are delicious, and in general I detest any packet food, but they are a real must, different flavours available, and you can always add to them, onions, mushrooms, meat, etc.,

great ides everyone, we need to go get some stuff for our trip next week so i think i will keep a look out for some of these bits, we are trying to go on the cheap this time so this lot will be very handy,
we only have one cool box but i have lots of icepacks, i freeze the milk, and any meat we intend on using, then i take lots of dried or tinned/jarred stuff, last time it was a jar of brockwurst sausages for hotdogs and beans, thin cut minute steaks from asdas with melted cheese on top in crusty bread, and a bbq with new tates,
for lunch we just tended to eat on the hop, so whatever the kids fancied, jam butties, crisps, fruit ect,

I've just read this whole thread thinking exactly that Nicola.....
Okay, I do bacon butties in the morning but soup and sandwiches is a good tea in our tent. Eat out a lot I have to say.
Think I might surprise OH and make a stew this time..
