Flysheet first and SIG is becoming more common; but 3 bedrooms usually means a big tent and they are never quick pitching.
Vango Auroras are reasonably priced (£120-200) and come to mind first. Relatively quick to pitch, if there is two of you.
There are the new Vango Breckenridges, which have three bedroom compartments, but they are new and I have only seen them on paper.
Coleman Magellan 6 are not that big, on sale (again under £200), but not sure I would describe them as quick pitch.

I too was thinking of the Magellan, but probably the 9 (which is cheaper than the 6, at the mo, but shouldn't take any more pitching). Look for World of Camping on ebay, who have some Magellan bargains at the moment.
