Well I had a good root about in the van today and discovered that there is no onboard pressure sensor and its just a micro-switch.
I found the wires leading up to the tap, but unfortunately, its so tight behind the sink that I just cant get at it properly. The only way to get at the tap would be to remove the sink, draining board and gas hob - which I really dont fancy doing!
I think I may just have to live with it as it is and remember to switch the pump off at the wall each time we finished using the tap.
Thanks for all your help everyone - I at least understand my van a little better now!
