Agree with capping it off, this must be done so no possibility of someone turning the tap back on to cause a massive 'leak' !! At the end of the day it must be 'gas tight' and that for peace of mind might need checking professionally.
Caps are available from B&Q but the smallest to my knowledge is 8mm (5/16") and fridges are often 1/4" or even 3/16" so you will need to hunt further for one, Or you maybe able to change a 'tee' off connection to the fridge under the van to a 'straight' connection and isolate it that way.
