I have a 2002 Sterling Eccles Onyx.  Soon after we bought it 4 years ago, both of the overheat thermostats disintegrated on the Ultraheat.  3 months ago the 125 degree thermostat failed again.

My questions are these: what is purpose of each of the two thermostats?  Is the temperature (125 and 175) critical?  Could higher quality/specification thermostats be fitted?
