it would be better to repair what you have. Cut out the rotten ply, keeping the foam you take out to reuse, make sub frames to insert into the existing sandwich and connect to the new parts(epoxy glue and screw, scooping foam out to gain access), then cover the repaired areas with new ply top and bottom.
That way it will be stronger than new and will still be well insulated.
