Open the window slightly, if it is cold out side then make sure it is warm in side, water will evaporate naturally,
Don't forget warm air can carry moisture cold air can't, so as long as the air is warmer in side it will carry the moisture outside where the air will become colder and release the moisture.
We always get a bit of condensation in our windows overnight, (6 of us and the dog produce quite a bit of heat) a bit of ventilation in the morning always cures it.

This I would say is the norm, 6 of you and the dof produce a lot of moisture from breathing too, of which can't escape out of the van as unlike the day you have all windows and doors shut.
As you said ventilation is the cure.
