i am looking for the right wood to replace some wall panels and a floor board, do i use hardwood plywood , structural plywood,interior,exterior mdf. im a bit confused

Ideally you would use Marine Ply, but this is hard to come by these days, so Builders Ply will do the job.
This is an Exterior Ply. It will cope with damp and condensation.
thank you. there is two wall panals to replace is it possible to remove it up to the roof and replace and glue the new board at the top rather than removing the roof panals to staple it to the wood beam ?

I don't see why not.
Ofcourse much will depend on what you are gluing onto.
When I did it, I had replaced some of the wood that ran along the edge of the roof (where the awning rail attached on the outside).
The wood that I did not replace, I treated with a wood preservative.
