Well there are plenty of Carver Cascade 2's for sale on ebay and you won't find a simpler one to fit but don't forget the pipework and new taps that can add up to a tidy sum. As has been said it is not a cheap upgrade and depends how much you want to keep your current van, the best option if you want hot water is almost always going to be...buy a van with it already installed.
A search for 'carver' or 'water heater' in 'automotive' will find everything on ebay.
