We have a 2011 coachman vip 520/4 with a Thetford N112 fridge. We have owned it three years. for the past year or so we have had problems with items in the fridge freezing. This week we had an ice block freeze in the main part of the fridge! Salad freezes in the salad drawer. The setting was at two bars on electric. Changed it to 3 bars and more frozen items today! the fridge is not overly full nor is the freezer compartment. We had it checked by a mobile technician on our last service and it appeared to be fine at that point, but probably wasn't on long enough to check. The fridge has been on since Saturday and first problem noticed Sunday. The vents are uncovered, although since yesterday it's in an awning. Caravan is level. Anyone have any ideas please, do we need to get a specialist thetford technician to check it? Is it past it’s sell by date? We don’t use the van lots, and it has happened more often than not! Thanks for any advice, help.
Firstly, 3 bars is colder than 2 so you need to try it on 1.
Having said that ours runs quite happily on 4 bars although we have had the occasional frozen egg when the fridge has been kept shut for some while.
Possible, I suppose, that the thermostat has packed up but I would think you would need an engineer for that.

The bars are coldness indicators that are no different to domestic fridges that use numbers but the principal is identical. The higher number means the colder it gets so you need to lower it to position 1.
If that fails to correct the problem it could be a defective thermostat.
Yes we have a door on it and as far as I know we do have a good seal, will keep an eye on it though. The freezer compartment normally has a lot of pre frozen food in it
We have been away for 6 days, it started freezing on the second day, we did have a fair amount of food in there to start with, but as it ran down we didn't refill it. We made sure contents were away from the fins at the back all the time. We are home now, so will keep it running and test it out further. We had it at number one on last two days and nothing froze.
Update - we have just been away for 6 days, the weather was lovely and really hot at times. We had the awning up, so fridge vents were in the awning. We had the fridge set on 1. The whole time we were away the fridge didn't freeze! Thats when it was really full to when it was nearly empty! Let's hope we can keep it going like that next time we go away. Thank you all for your help and suggestions.
Further update - adding this in case it helps anyone......... the fridge continued to freeze when we went away. We replaced the thermostat and have now used it for 21 days with no further problem.
