We had to pack ours away in pouring rain Mayday BH weekend. Because of the rain the field had turned into a field of mushy sand & rabbit droppings! We left the zig attached and managed to get it in a couple of bin bags for the journey home. Having the tent rolled up meant that the inside was absolutely sodden once it was unpacked and the groundsheet had pools of water inside. It was impossible to pitch as the fabric was so heavy so I had to crawl inside to unzip and remove the groundsheet - got absolutely drenched!
Then pitched the tent to dry out overnight - next day decided to try and find out if it was possible to unzip groundsheet, let down flysheet on top of the groundsheet and then find a way of folding the fly separately having had the benefit of letting it down onto a clean, dry surface. Just as I was contemplating whether this was possible it started to rain again, so quickly folded as was and carted it all inside as one, almost breaking my back in the process! I do want to find if there is a way of doing this, as had we taken the groundsheet out first and let the tent down onto the sandy mush the inside of the tent would have got into a right mess!
BTW, even when dry it is nigh on impossible to pitch the tent with the zig attached as it's just too heavy, although I guess if a third person went inside the tent it would be easier as they could support some of the weight while lifting the first pole.
