With 2 adults it shouldn't take too long, but you DO need 2. I did manage to put mine up alone the first time on a very still day in the garden, and it took me about an hour - with 2 of you it should be about 30-40 mins fully set up I'd have thought.
It's a wide tent, certainly. I've only pitched mine at 1 campsite and it wasn't a problem there, but at others it might be: there's a topic in the forums about sites and large tents. There's no SIG, and the AirFlo system (for which read, the flysheet around the bedroom pods doesn't touch the floor) can mean the tent is a bit draughty when it's windy - helps with condensation of course, but something to be aware of.
I'm pleased with mine - I like the space and the ventilation, but I agree the size is a bit of a concern. With hindsight, I might have gone for a tunnel tent with SIG had I not conned myself into thinking I'd be able to put it (the Wyoming) up by myself.
