We just got back from a tester weekend at West Runton with our new Vermont L. We had a quick go in the garden when we first got it, but this was the first time on a site for real :-)
From taking out of the car to fully pitched was about 45 minutes. About the same on the way down too.
For pitching we rolled it all out and inserted all the poles into the relevant sleeves. Then I pegged out the back at the four ground anchor points.
Then with one of us at each side, we moved along the poles lifting them up and putting the pins in at the bottom. By keeping a bit of forwards tension on the poles we were able to move along to the front of the tent quite easily and it all stayed up. Then once at the front we pegged out the front two corners before going round and adjusting the sleeves over the top etc and finally doing the rest of the pegs.
Only error I made was pegging the front out too taught, which made the front door zip too tight to open over one corner, but a bit of re-adjustment and it was fine.
Taking down we unzipped all the doors, and did everything in reverse. For the folding/rolling up we placed the empty carry bag at the end so we knew we'd folded it up to the right size before we started rolling. Folding: we folded the front door back towards the rear of the tent a bit so we could start with the four corners of the bottom. We then just folded each half into the middle longways on. Then we turned the tent sideways on, and folded into the middle again till we had it the right width for the bag
Rolling was slightly difficult untill I worked out that I made a good rolling pin, so every couple of turns I laid on the roll and could feel the air coming out. It worked, though my wife thought it very funny to see me in the middle of the site, on top of the roll with a phhsssshhhh sound coming from underneath me.
There may be easier ways to do it, but this method worked for us. Hope that help.
