Want what it says in the subject heading, quick to erect and to throw a double air bed in. Will only be used for summer camping.  Any ideas?

Any fishing bivouac will do the trick. 

Mine takes 5-6 mins to erect, will sleep 3 at a push, 2 comfortably.  Will accept double sleeping bag and is double skinned with a SIG. 

Ticks every box you mention.

I have a Quechua 3 second pop-up - it's fab! Only takes total of 5 minutes to set up and while one person is knocking in the pegs, the other can be setting up the airbeds etc.

We got a Gelert pop up for overnight stops on long journeys. Have not used it yet so can't comment on leaking etc but it certainly is big enough for a double airbed and it up and ready in less than 5 minutes !

Well I lied... had to google to find out how to get it down again but once you know how THEN it is 5 minutes

What about the peridot air tent. Goes up in seconds and is pretty stable. Plenty of space for two.
