I have always had single skin tents and never really had much trouble with condensation. I have a nevada xl at the moment , one of the tents you are thinking about. I have only ever found a small pool of water collect in one corner, small enough to mop up wth a bit of kitchen roll. at the end of a weekend , and we were 5 in our tent. I always have the windows and doors open as often as possible anyway, and I don't cook in synthetic tents either. condensation is worse on a wet weekend, when you are shut up inside and with wet coats and stuff drying inside. the vapour has to go somewhere.
Its like blowing up a ballon, always a bit of water collects inside from the breath, a fully sealed groundsheet tent needs to be ventilated to let some of the hot air out.
