There is not much to choose between the Khyam Sherpa and the Vango Beta in terms of build quality- both are good value for money low level tunnel tents. The Vango Omega offers the advantage over these two of having alloy poles which have much greater strength-to-weight ratio than the fibreglass poles of the other two models; that is why it costs more.
Darcydog mentions the Aztec Hawk 3 - this is a different order of tent really. The poles are steel (so the tent is heavy ay 25kg) but it offers much more space, though the stand-up height may be a disatvantage in very exposed scottish sites.
Merry's recommendation is a good compromise between these two extremes. We have Coleman tents and are extremely happy with the quality. The Celcius Duo model has great stability with the crossed over poles of the dome and durawrap poles which are reinforeced versions of ordinary fibreglass ones. The fact that the living area groundsheet zips out is a handy extra feature too, in terms of separating it from the flysheet if muddy. So, I think, if you can stretch your budget, this could be the one to go for.
