My personal suggestion would be a Khyam Ridgidome tent - in the current range say the Longleat. Go up relativley quickly for such a large tent due to the Rapidex pole system, really sturdy and rock solid in the wind. We love ours :-) And Khyams are realistic on the sizing, soa n 8 berth really is an 8 berth.
Downside is expense - they cost £500+ but worth it.
Though you can get good deals on older models being sold off, or 2nd hand if you so wish (Both our Khyams were bought new, but much reduced as old models.
For example the Ridgipod, which was the currrent model a 3-4 years ago now is being sold off in a package on Ebay for £350. It says sleeps 6, but we have this tent and it will sleep 8 comfortably with the porch inner and the one bedroom pod.
its got a very large living area with 4 seperate sleeping pods they are not cheap at £449 but they are well worth it
we are on our 3rd outwell now and the 1st 2 were the hartford xl and the xxl of which we still use
we are a family of 5 and a dog and it has got lots of room for us and it can also take the unpredictable british weather we have been caught out on 2 seperate ocasions with force 7 gales on the same campsite over looking the sea the tents had an absolute hiding the 3 outwell in our group on the last occasion were still standing with not even a cracked pole the rest of the site had a couple of awnings down and a few tents were flat so i can vouch for these tents they are made for the weather and for the room.

I recently got a brand new 2006 Wynnster Corvus 8, which I put up with the help of my 10 year old daughter in the garden in about 40 minutes first time round. Only thing that would have added time on would be pegging all the guys out as I only did some but I think next time should be a bit quicker anyway as now I know how it goes up.

for sleeping on we prefer self inflsting mats. My wife who is not a small lady either and has a cronky hip uses an Outwell 7cm mat and sleep in an Outwell Camper Lux To big and hot for me but she loves it, and is never cold anymore

Khyam Ontario 8 is a fab tent and I can HIGHLY recommend it as can several other members on here.
* 7.5m x 3.7m so no problems fitting on a pitch * very easy to erect (first time took us 45 minutes from start to finish) * SIG * standing height (225cm) * groundsheet goes flat at doors so no trip hazzard * large bedroom pods can comfortably accommodate 8 x 75cm wide airbeds * massive living area * huge windows with curtains and vents so plenty of light * doors can be canopied out to form sun porch * good ventilation
We paid £189 in 2007 and got the footprint groundsheet thrown in for free. You can also buy carpet and porch to make it a real home from home.
