OK - I'm really showing my ignorance here but what does "double skinned" mean? Is it a double layer (in which case I thought my quechua pop up was but isnt) or a thicker layer or what?

In my understanding, for most tents it is basically used to mean an inner tent and a flysheet. The inner catches condensation that falls from the flysheet.
I read somewhere that an adult breathes out about a pint of condensation a night.
Some technical mountain tents have the fly made of multiple layers to help with heat retention.
It's only really relevant to smaller tents. Family tents tend to have a flysheet (with or without sewn-in-groundsheet - SIG) and hanging bedrooms. In that sense they are double skinned but it's more like a single skin tent with inner compartments.
Smaller tents with only a sleeping area tend to have a flysheet that covers the inner tent closely. No SIG on the flysheet but obviously a groundsheet on the inner to sleep on. So you'd call that double skinned. The flysheet gets well ventilated around the edges and the inner has lots of mesh to avoid condensation.
Really lightweight summer backpacking tents might not have an inner at all, just the fly. Because the waterproof fly will have a groundsheet attached and is therefore a closed non-breathable shell, they tend to suffer from condensation.
thanks, I have wondered about that for ages and couldn't work out how my quechua pop up tent was double skinned - it obviously refers to the sleeping areas.

Yes but some tents have a double-skin in the living area too - makes it much warmer when you are driven "indoors" on rainy days or cold evenings. I chose my EasyCamp Cosenza 50 on that basis and am really pleased with it. It's now discontinued and if that is your criteria you have to wade through an awful lot of reviews till you find one.
i have a gelert utah 4+4,this is a double skin tent.you pitch the inner tent first with sig then fly sheet after,its a lot warmer and we dont hardly have any condensation
