Can anyone recommend a 2/3 man tent that is ideal and easy to put up for a solo camper, but must be able to stand up in it?
I have been thinking about the Khyam Freelander. Would this be too big for a solo camper?

Vango Kairos 400 - very quick to put up! Just over 7 minutes and that was first attempt. Standing height - lightweight - 1 main pole and 1 fiberglass pole. 2 doors, 1 large window at front. A lot of room in lounge area - fitted 3 chairs and table. I could aliken it to The Tardis (Dr. Who's - not a tent type), felt a lot roomier inside than it looks from the outside. Would highly recommend for a couple or even a single person.
I think the Freelander makes a great solo tent...look in the review section for some good pictures. Personally I'd want nothing smaller than a three man just for myself!
It's hard to get a stand up tall tent for three, but there are a few. The Easycamp Licata three man or four man version is a good example, as is the Kairos from Vango, or if you want you can get a Decathlon Quechua Base seconds with the optional extra inner which I use when I go camping when it's just me and the dog.

I've just bought an Outwell Oakland M - on my 1st pitch, with no help it took me about 25 minutes - not bad for a girl!!
I easily fitted 2 Aviator camping chairs & a 70x70cm table in the 'lounge' area & a double air bed in the bedroom with room to have my clothes bag at the end of the bed.
I love the quality & stability, just a little frustrated with the door angle/lack of shelter if it's raining, hence my post earlier about a canopy/tarp/extension!
It's perfect as it is if we're guaranteed sunshine, but needs something to shelter the front door if it's raining, which it usually does when I camp!
