What about a tipi my children have a Juno 500 which takes all of 5 minutes to pitch. We have a Quechua 4.2 which takes 10 minutes has a reasonable living area and two vis a vis bedrooms that both take double air beds. The difference is the pack sizes. The tipi is about the same size as a sleeping bag whereas the 4.2 is quite a fat disk. If the tipi appeals you could try the larger 800.
