I would like to put extra eyelets in the mudflap on the belltent so that when pegging it with the groundsheet inside it fits better.
Would these work do you think and are they easy to use?

I've had the most success with the re usable plastic eyelets. They are a bit more bulky, but don't rust. Most of the cheap eyelet kits are just plated brass, and will rust. I would recommend Hipkiss brass eyelets from a chandlers, as these will/should be solid brass so won't rust. Also they are/were, (when I sold them) deeper with more grip.

Get stainless steel ones as used for sails. They won't rust, and can be had fairly cheaply. And I think you're better off going for ones with a large internal diameter so you have plenty of peg options, cos those wire pegs don't always go in the ground!
