I've got the poly bell tent Victoria1 mentioned (can't do links, but I've put a review of it under "Other tents"), and I am confident it can be erected and taken down from a wheelchair. I myself had to manage it walking with two crutches.
It's single skin, but I made an inner for it from cheap sheets. The inner can be fixed to the pole before erecting it.
There is lots of space, and my tent has withstood 2 days of heavy rain and wind without any problem or leak.
