It sometimes feels as if we've had every canvas tent known to mankind! We've also got a big family, so I know it's a bit of a task getting everything and everyone sorted (and even more of a challenge on your own - I think you're great for not letting single-handed pitching put you off!).
In your shoes, I'd go for a 5m bell tent with SIG or ZIG. We've had one, and whilst it wasn't our cup of tea, I can see how it would work for a solo camper who wants a good-sized canvas tent. I'd just warn you that the pack size is quite heavy (but if you can park right next to where you plan to pitch - which you usually can - this shouldn't be an issue).
It is, quite simply, the easiest tent to pitch out of all the tents we've had. And yes, it would be big enough to live in (esp if you either shifted the beds to one side during the day and piled them on top of each other, or if you used self inflating mats, so that the kids could just play on them when the weather keeps them inside).
The only problem might be cooking area; without a porch, the bell tent isn't really suitable (in my experience) and so you might be as well considering a kitchen tent (easily pitched solo!). A pop-up one would be ideal.
Hmmmm...think I've just described Val Barley's current set up, here...
