A little 3m bell tent would be ideal, one pole then guy out, gheres a lot of other 3 births around that would probably be okay, a lot depends on what you consider too much of a tent to pitch and how much you want to spend, how about something like the easycamp tipi.
I shared a Hi Gear Rock 4 tent with a friend the other weekend. There was plenty of room for both of us and it stood up really well in some pretty blustery weather. Very easy to erect/strike with two of us. Otherwise I would recommend the Vango Icarus 400, I have one and it is a great tent. A lot of people rate the Kampa tents but I have no personal experience of these.
EasyCamp Tipi - reasonable price, weighs near to nothing, easy and fast to put up, standing height, lots of space for 2 persons. Mine has been testet in heavy rain and wind and performed well. Only drawback is that it has no windows.

We'd second the Kairos 400 if you can find one. We use ours for 2 adults and a 5 year old for touring and quick weekends. We have even thought of buying a second to replace it when it eventually goes. The design is just so practical, strong and quick! Lower height beds are needed though - our Coleman comforts are too tall but beds around 11cm high are fine!

My 11 year old daughter and I can put up the Icarus 500 in no time - but we take my twin boys too (they go to the park and play and leave us to it!) and its plenty big enough for us for a weekend - so a smaller Icarus would be ideal for you!
