I am looking for a small tent that my other half could use for weekend trips on her own, with the dog. The dog is talented but not quite up to the task of helping to erect the tent so need one she can erect herself. We had identified the Carolina S as a fine candidate but they seem to be rarer than hens teeth. Have outwell discontinued this and if so has it been replaced and what with?

Have a look at the Outwell Birdland 3 which may be a suitable alternative to the Carolina S.
I have the Licata 400 and the Khyam Nevada which I can pitch solo in less than 20 minutes.
My friends have the Vango Icarus 500 which again can be pitched solo.
Sadly the Carolina range was discontinued after 2011 so I reckon you'll have a bit of a job tracking one down unless it's pre owned.
They are cracking little tents though and definitely ideal For a couple, we sold our Carolina and replaced it with the Missouri river 3 which is the same tent but in polycotton and use it for very short (1 or 2 night) breaks.
There are similar tents on he market such as the Outwell Oakland M (I think this is also discontinued now though but you might still find a couple around) the Lichfield Findhorn (my sister has one of these and it's a pretty impressive bit of kit and pitches in exactly the same way), as Helen mentioned, the birdland 3 is another contender and possibly the vango Kairos.
Pop-ups also seem to be popular as long as you master the art of getting them back in the bag again
