You said it took 1 hour to dismantle your tent and pack-up - is that the time just to take the pegs out, tent down and put in bag ? We can get our poled similar sized polycotton down and packed in less than half that and I would say it takes us about 45mins to pitch.
That would make the combined pitching and dismantling times of a poled and inflatable tent pretty similar - or am I missing something?
Ages ago I suggested a race between a poled and inflatable pitching and taking down. Never happened - I suspect for people who know their tents well the time wouldn't be that much different and the manufacturers who are charging a horrendous mark-up for inflatables compared to poles don't want people to know!

I think it's just a case of no poles full stop for us, just hate them. And just the ease of pump up and no threading into sleeves or zipping them in etc. Pulling them out and becoming dislodged etc.
got our last tent a biscaya because of practically no guys and ease of putting it up , our dog then used to get tied up with them. But the poles had the nobbley bits and as we aged they became harder to press in and hurt my thumbs. So that's when we started looking at inflatables.

I don't rush at all when packing away, everything is left perfect for next set ie: ground sheet cleaned, guylines all set to right length and tied in a way that one pull releases the rope, valves screwed back in when completely deflated leaving the inflation caps loose etc.
I don't think there is a huge difference in time to pack up poled vs air on a similar style tent, but huge difference in set up time when compared to an outwell bear lake + front extension. I have both and there are pros and cons with each tent.

It's called "Hanking", y'know. I learned that from these forums, two years ago. I spent the whole weekend at it. One day googling the word "hanking" (There's loads of vids, to show you how to do it properly!), and the second, hanking in the garden. It was very satisfying!
Just be careful of that googling though, if you have fat fingers!
...Then again, if you have fat fingers, should you be hanking at all?
